An omnivorous foodie and a classically trained chef, Simon knows his oysters, co-creating SHUCK London and previously working with the Wright Brothers at Borough Market.
Drawing on the great selection of oysters in the Market right now, he'll talk through the varieties available, the differences between them and how best to cook them.
His menu will include:
Miso poached oyster dashi
Flame-grilled seaweed oyster
Fried oyster taco
